How to Tell Polished From Unpolished Dal in India

Polishing is a friction step applied to dal after dehusking and splitting, using oil, water or a cloth-covered roller. Tamil Nadu Agricultural University describes it as a step to remove dust and improve appearance. It is cosmetic, and it is the last thing done before bagging.

The test most people are told to run does not detect it. Rubbing dal in water and watching for colour is, in India's own food authority's framing, a test for added dye, and dye is not polish. Nothing in a home kitchen reliably separates the two.

What does polishing actually do to a grain?

The university's account of traditional dry milling is direct. Polish is given to dehusked and split pulses by treating them with a little oil or water, or both. It comes last, after cleaning, pitting, oil pre-treatment, conditioning, dehusking and splitting.

Two oil steps get confused here. Earlier in the sequence, pitted pulses are mixed with edible oil, roughly 1.5 to 2.5 kg per tonne, and left about twelve hours so it diffuses in. That is a milling aid that loosens the seed coat. The polish at the end is a surface treatment for looks.

The machinery appears in an Indian pulse-polishing patent filed by a milling equipment maker: rollers covered in leather, nylon rope or velvet cloth, where repeated rubbing adds lustre. The trade names them after the material, so leather, nylon, cotton and oil-water polish are the same operation done differently.

ICAR's Indian Institute of Pulses Research notes commercial mills use oil smearing or thermal treatment to loosen the seed coat, while traditional small-scale milling relied on water soaking and roasting.

Why do mills polish dal at all?

The patent answers this without euphemism: polishing removes dust and improves appearance, which helps fetch a premium price for the processor.

It contradicts a prevalent belief. Polishing is not a shortcut that makes dal cheaper. It is a finishing step that makes it dearer at the mill gate, as grading and sorting do.

The same document confirms powder polishing exists, and that one equipment maker treats it as a problem to design out, claiming its machine needs no white powder or glucose-like substance to add shine. It does not name the powder, and neither will we: no government, ICAR or peer-reviewed source we could open names one.

What does Indian law actually allow on a pulse?

There is no legal definition of polished or unpolished dal in India, and the notified standard for pulses never uses the word. It sets limits for moisture, extraneous matter, defects, discoloured seeds and uric acid, and bars toxic or noxious seeds and added colouring matter.

What does bind is narrower and more useful.

The first does the real work. Talc is a permitted food additive in India under good manufacturing practice, but that permission carries an annex listing the categories it does not reach, and category 6.1 is on it. Both were checked in FSSAI's additives compendium and its prohibition compendium.

Read carefully, this is an inference rather than a ban. No Indian regulation prohibits polishing by name. The rules prohibit any additive left in a dry pulse, any mineral oil coating and any added colour. A buff with water or a little edible oil leaving no residue is not addressed, and reading these rules as making polished dal illegal would be wrong.

Does polishing remove nutrition?

Nobody has measured it separately. Every available figure for nutrient loss in dal measures dehusking and splitting, not the polish that follows.

The dehusking numbers are real and large. The ICMR-National Institute of Nutrition's Indian Food Composition Tables lists whole and dehusked forms separately.

Dehusking measured in chickpea points the same way, with cellulose falling 21.6% and hemicellulose 29.6% while soluble protein rose 21.3%.

None of that measures polishing, and transferring it would misstate the evidence. The widely repeated claim that polishing strips a fifth to two-fifths of the fibre traces to retail marketing rather than any study we could locate.

One complication is that the word means two things. ICMR-NIN's Dietary Guidelines for Indians place whole dal in the least-processed group and highly polished rice and dal in the next group down alongside maida, where some fibre is lost. That is polishing in the sense of refining a grain, not buffing a split pulse until it shines.

Can you test for polish at home?

No, and the popular test is aimed at something else. FSSAI's guidance note on pulses sets out household checks for synthetic colours, metanil yellow, lead chromate, ergot, kesari dal and foreign matter. The colour test reads: add two teaspoons of pulses to a clear glass of water and mix, and pure pulses leave no colour while adulterated pulses colour it at once.

That is a dye test. Colour leaching proves added colour, which is separately prohibited, and says nothing about polish, because polishing materials are not coloured. Dal that leaves the water clear can still have been polished.

FSSAI names talc and mineral oil among intentional adulterants generally, in its household adulteration manual, but publishes no household test for either on pulses.

What can you actually judge, then?

Gloss is the one honest signal, and weaker than it looks. Since lustre is the deliberate product of a friction step, high uniform shine is evidence a polish was run, not of which material was used nor of anything unlawful.

Everything else worth knowing is a laboratory measurement. Moisture, uric acid at 100 mg per kg, extraneous matter at 1% and broken grain at 3% are the enforceable limits, and none is judged by eye.

What do buyers most often get wrong?

Four assumptions do the most damage.

  • Using the water test to identify polished dal. It is a dye test. Colour leaching proves added colour, and dal polishing agents are not coloured, so clear water proves nothing either way.
  • Assuming the agent is always talc. No government, ICAR or peer-reviewed source we could open names a specific mineral powder as standard practice.
  • Treating "unpolished" as a defined term. It has no definition in Indian food law and no labelling rule.
  • Assuming polished dal is the cheaper option. Polishing is a finishing step that earns the mill a premium, in the same way grading does.

What this does not settle

The price question has no verified answer. India's consumer affairs department tracks dal prices but does not separate them by polish status, so no government or peer-reviewed source publishes a polished against unpolished price gap. The direction is documented; the size of any retail difference is not.

Two other gaps are worth naming. No study isolates polishing from dehusking, so its nutritional cost is unmeasured rather than small. And we found no food-authority survey reporting how many market samples carry a prohibited coating.

Does washing dal remove the polish?

Washing removes loose surface material and dust, and it is worth doing regardless. Whether it removes a polish depends entirely on what was used, and since a buyer cannot know that, washing cannot be treated as a reliable fix. It is good kitchen practice rather than a corrective step.

Why does unpolished dal look duller and less even?

Because nothing has been done to make it look otherwise. Uniform gloss is the deliberate output of a finishing step, so grain that skipped it keeps its natural variation in shade and surface. Some unevenness between grains is normal in any lot and is not a defect in itself.

Does polished dal cook any faster?

Nothing in the published milling literature suggests polishing changes cooking time meaningfully. Cooking speed is governed mostly by whether the seed coat is present, how old the grain is and how long it was soaked. Dehusked split pulses cook faster than whole ones for those reasons, not because of a surface finish.

Which pulses get polished most often?

Split, dehusked pulses are the ones that get polished, because the step exists to finish a cut cotyledon surface. Whole pulses that keep their seed coat, such as sabut moong or whole kala chana, do not go through the same finishing operation. That is the clearest structural difference between the two forms on a shop shelf.
