Stone ground and unfortified are two different claims about two different stages, and an atta can easily be one without being the other. Stone ground, usually sold as chakki atta, describes how the grain was broken down. Unfortified means no micronutrients were added after milling.
Most national brands are roller milled, fortified, or both, which makes the overlap smaller than the shelf suggests. The two attributes get conflated because both sound traditional, but one describes how the grain was milled and the other describes what was added afterwards.
What does stone ground actually mean?
It means the grain was crushed between stones, in the traditional chakki method, rather than passed through steel rollers. The whole grain including the bran and germ goes in, and the flour that comes out contains everything the grain contained.
The practical difference is heat and separation. Roller milling is a high-throughput process that separates the endosperm from bran and germ, after which some or all of the bran may be added back. Stone grinding crushes everything together at lower speed.
The word to watch on a pack is "chakki", which is the common Indian term and appears far more often in searches than "stone ground" does. Both describe the same method.
What does unfortified mean?
It means nothing was added after milling. Under the Food Safety and Standards (Fortification of Foods) Regulations, 2018, fortified atta carries added iron, folic acid and vitamin B12 at specified levels, and once fortified, the pack must declare it.

Why do the two get confused?
Because both are read as signals of the same thing, which is minimal processing, and marketing encourages the conflation. A pack saying chakki fresh reads as traditional and unprocessed, and a shopper reasonably assumes nothing was added.
But the two are independent. A chakki atta can be fortified, because fortification happens after milling regardless of how the milling was done. A roller-milled atta can be unfortified, because nothing obliges a miller to add anything.

Which one matters more?
They answer different concerns. Milling affects what stays in the flour from the grain. Fortification affects what is put into it afterwards. Whether either matters to you depends on what you are trying to achieve.
The case for caring about milling and sourcing has strengthened on the evidence. Research published in Scientific Reports analysing landmark high-yielding rice and wheat cultivars released across five decades in India found grain zinc in wheat fell by roughly 30 per cent and iron by roughly 19 per cent, with a mineral diet quality index down around 36 per cent for wheat between 1960 and 2010.
The case for fortification rests on reach. An early assessment of the Haryana wheat flour fortification programme looked at how fortified flour moves to households through state distribution, which is a scale of delivery that no sourcing decision by a private brand can match.
Both are real. Neither settles the other.
How do you confirm both on a pack?
Four checks, all readable before you buy.
- Look for chakki or stone ground in the product description, not merely a rustic image of a grinding stone.
- Read the ingredients declaration. Whole wheat alone means unfortified.
- Check for the +F logo and the "fortified with" wording. Their absence is the confirmation.
- Check for the thalassemia advisory, which appears only where iron has been added.
Checks two, three and four settle fortification conclusively, because the labelling obligations are mandatory once a food has been fortified. Check one is weaker, because milling claims are descriptive rather than legally defined in the way fortification labelling is.
Why is the milling claim harder to verify than the fortification one?
Because one has a legal test behind it and the other does not. Fortification labelling is governed by regulation, so the wording, the logo and the iron advisory are obligations with a defined trigger. Milling is a description of a process, and a description is only as reliable as the company making it.
That asymmetry matters when you are comparing two packs. The absence of a +F logo is evidence. The presence of the word chakki is a claim, and the only way to test it is the same way you test any sourcing claim: ask what the mill is, where the grain came from and whether anything has been measured rather than asserted.
It also explains why the two attributes attract different kinds of marketing. Fortification is stated plainly because it must be. Milling gets the photography, the rustic typeface and the heritage language, because nothing compels precision.
The practical rule follows from that. Treat the fortification status as settled by the label, and treat the milling claim as a question to put to the brand.
Which brands sit in both categories?
Smaller whole-grain and heritage-grain brands, generally, rather than the national names. Aashirvaad, Annapurna and Pillsbury all sell fortified lines and appear in FSSAI's fortification listings. Anveshan and SatRas are examples of the smaller category that does not fortify.
The reliable approach is still the pack rather than a brand list, because both attributes can change between production runs without the brand name changing. A list is a starting point; the label is the evidence.

What neither attribute tells you
Neither tells you the flour is more nutritious for you specifically. Stone grinding retains the whole grain, and a whole-grain flour is a whole-grain flour whichever way it was milled, so the difference is a matter of degree rather than of category.
Unfortified likewise is not automatically better. Fortification exists because deficiency is measurable at population scale, and for a household relying heavily on staples for micronutrient intake, added iron and folate may be doing real work.
What the two attributes together do tell you is where the nutrition is coming from: the grain itself, or a premix added afterwards. That is a legitimate preference, and it is checkable.
