Sarso ka tel is mustard oil, pressed from mustard seed and sold unrefined, which is why it arrives dark gold, smells sharp and catches at the back of the throat. That bite is not a defect and not an additive. It is allyl isothiocyanate, a compound formed when mustard seed is crushed in the presence of water, and Indian food law uses it as the test for whether a bottle may call itself kachi ghani at all.
The majority of info a consumer sees on a mustard oil bottle is not monitored by regulation. "Kachi ghani" and "cold pressed" are well-defined terms according to Indian legislation meaning the same thing.
The phrase "Wood pressed," now found on the label of an increasing number of premium products, is not mentioned in any law. Telling the legal terms apart from the marketing ones is the most useful thing to do before buying a bottle of oil.
Why does one bottle carry three or four different names?
Sarso ka tel, mustard oil, kachi ghani, cold pressed and wood pressed could refer to the same oil, however they refer to different things: the raw material, the term used, the legal definition and the equipment.
The Hindi term for mustard oil is "sarso ka tel," and it is the term that is most commonly searched by the Indian buyers. Kachi ghani and cold pressed are the two terms that are allowed by the Indian Food Regulatory body for the oil that passes only one composition test.
Wood pressed refers to a kolhu with a wooden pressing shaft, traditionally Imli or sal, turning slowly enough that the seed paste does not heat much. Expeller pressed means a modern screw press, faster and hotter. Refined means the oil has been bleached and deodorised, which strips the colour and pungency and produces a genuinely different product.
What does Indian law require before a bottle can say kachi ghani?
One number, and it is not a temperature. Under the FSSAI mustard oil standard, an oil may be labelled kachi ghani or cold pressed when its natural allyl isothiocyanate content is not less than 0.20% by weight. Both phrases sit behind the same threshold, so in law they are interchangeable.
Does "cold pressed" promise the oil was never heated?
This surprises people, because "cold pressed" sounds like a promise about heat. It is not.
The regulation employs a compositional proxy: press the seed lightly and the pungency chemical remains present in significant amount, so the metric for the compound serves as a metric for the process. A bottle showing 0.20% indicates that the oil is in fact unrefined. It does not contain any information about the press temperature, press type, or which seeds were used.
Why does the 2020 blending ban matter here?
There is history behind why Indian buyers care so much about this word. For decades mustard oil could legally be blended with cheaper oils, and adulteration scandals followed.
The mixing of mustard oil with any edible oil was prohibited in India back in 2020, which means that a bottle labelled as mustard oil today actually has just pure mustard oil contained within. As a result of this restriction, today's plain "mustard oil" has a different significance compared to what it had twenty years ago.
What does "wood pressed" guarantee?
"Wood pressed" carries no such threshold. Nothing in the standard defines it, which means no test can fail it. That does not make it meaningless, since a slow wooden kolhu really does run cooler than a screw press, but it does mean the claim rests entirely on the brand rather than on a regulator. Is sarso ka tel the same across India?
No, and the differences can be recognised from the seeds. Indian mustard oil is pressed because it comes from more than one species of the plant and the coloration of the seeds alters both the flavour of the oil and the fat profile of the product that is bottled.
Black and brown mustard seeds provide the thick, intense colored oil used in Bengali cooking and in pickling across cultures. The yellow seeds yield a milder oil that is not as pungent in taste.
The people of Punjab and Haryana use oil for everyday cooking, such as tadka and sarson da saag preparations; people in Bengal use it raw for fish dishes and kasundi; in Kashmir most meats are cooked in it. When people purchase mustard oil without checking the seeds, they may end up with an oil that is much sharper or milder than desired.
The seed also changes the fat profile, not just the taste. Yellow mustard seed tends to yield an oil higher in monounsaturated fat and lower in saturated fat than black, which is why the two are worth treating as separate products rather than as one product in two shades. Price follows the same logic: yellow seed gives less oil per kilo pressed, so a yellow oil generally costs more per litre than a black one from the same producer.

Which oil suits tadka, pickling and everyday cooking?
Black mustard oil is the traditional choice for tadka, pickling and marination, because the allyl isothiocyanate that makes it sting also preserves a pickle and cuts through fat in a marinade. In a pickle that compound is doing real work rather than adding flavour alone, since it has documented antimicrobial activity.
Yellow is the softer choice, and the one we can give to someone who has had a previous experience of mustard oil being too strong. High oleic is in the third position: developed for a specific association with fatty acids rather than with a taste of its own.
Does the pack name the seed variety?
This hardly happens at all. Hence, when it happens, it is very significant. SatRas grows a named variety of exceptionally high oleic, named Raya Hisar 1706, developed by CCS Haryana Agricultural University, on its own farms in Hisar and processes it in a wooden kolhu.
The company's black oil is a different story in that it engages with farmers from Rajasthan and Haryana and acquires raw material from them without the need for growing it on the company's farm. While both are legitimate, the claim is not identical and therefore needs to be verified with respect to each brand using these claims.

What does a bottle actually have to tell you?
Mustard oil labels must include the FSSAI licence number, the manufacturer or packer's name and address, net quantity, packing date, best-by date, and nutritional information, as per Indian packaged food regulations. Other than that, everything depends on the brand.
Which is where the useful reading starts. A nutrition panel is mandatory, but the level of detail is not: a brand may declare total fat and stop there, or it may break out saturated fat, monounsaturated fat and polyunsaturated fat separately. Fewer still publish a full fatty acid breakdown naming oleic, linoleic, linolenic and erucic acid, because that requires paying a laboratory and then living with whatever the report says.
The date of packing is more significant for crude oil than most buyers realize. Unrefined mustard oil retains its aroma compounds well as well as its unsaturated fatty acids, both which degrade rapidly with time, exposure to light and heat.
An oil pressed four months ago and kept in a clear bottle on a sunlit shelf is a different product from the same oil pressed last month and kept in tin. This is one of those cases where the packaging is not just a marketing combo: dark glass and non-transparent tin slow things down, while transparent plastics do not.
What do the published fatty acid numbers actually show?
Very few Indian mustard oil brands publish a per-100g fatty acid breakdown, which makes the ones that do worth reading carefully. Published surveys of Indian mustard show composition varying widely between cultivars, so a figure for one oil says little about another. A breakdown is not proof of quality, and it does not tell you how the oil will taste. What it does is make a claim checkable, which is a different and more useful thing than a claim being impressive.

What do these numbers leave out?
Two things are worth noticing, including one that is not flattering. The yellow oil carries the best fat profile in the range on the two measures a label can show, at more than 70% MUFA and only 4.9 g of saturated fat.
Neither black nor yellow oils include oleic or erucic statistics because only high oleic oil has a total laboratory analysis given. This number is missing here because it was never disclosed in the first place, meaning that we should not infer the absence of a number based on adjacent column's value. As for bigger group, Codex Alimentarius asserts mustardseed oil's fatty acid range of 22.0 to 50.0%, expressed as C22:1.
How do you tell when sarso ka tel has gone off?
Smell it. Fresh unrefined mustard oil smells sharp and green; oil that has oxidised smells flat, waxy or faintly of old paint, and the pungency fades before the smell turns. Rancidity is a separate question from adulteration, and it is the more common one in an Indian kitchen, because a 5 litre tin bought on offer often outlives its own freshness.
It operates due to three factors: oxygen, heat, and light. Unprocessed oil does not incorporate antioxidants and has a high unsaturated fraction, thus making it more sensitive than processed oil, but this is a necessary compromise when preserving the colour and scent. Isolated storage, with the cap closed and away from the stove and sunlight, can do more for the longevity of oil than anything that can be found on the bottle's label.
Pack size is the practical lever most households ignore. ICMR-NIN's guidance of roughly 25 to 30 g of oil per person per day works out to a little over 3 litres a year for a single person and around 12 litres for a family of four.
Purchasing a tin with a capacity of 5 litre is a prudent option for a family and an unwise one for two individuals, regardless of what the price is per litre of the product. What the erucic acid debate settles, and what it does not

What is erucic acid, and where did the concern start?
Erucic acid is a long-chain monounsaturated fatty acid abundant in mustard and rapeseed. The concern originates in mid-twentieth-century studies that found cardiac lipidosis in rats fed high-erucic diets. A 2023 review in Nutrients concludes the evidence for harm in humans at dietary levels is considerably weaker than that animal work suggested, while stopping short of declaring the question closed. The recognised low-erucic threshold sits under 2%, which almost no traditional Indian mustard oil approaches.
Is it actually banned in the United States?
It is worth being precise about what the restriction abroad actually is. Mustard oil is not completely banned in the USA; it is not approved for use as a cooking oil, and it is sold under external use labelling only. This represents regulatory classification rather than being a conclusion drawn on whether the oil does any harm to the body at Indian intake amounts, and this distinction is largely missed in most literature on the topic.
SatRas's high oleic oil measures 23.85 g of erucic acid per 100 g on its published report.
