Which Mustard Oil Has the Most MUFA in India?

Every mustard oil is high in monounsaturated fat, typically 60 to 70 grams per 100 grams, so the headline MUFA figure separates almost nothing. What separates one oil from another is the composition of that MUFA. Peer-reviewed analysis of mustard oil reports that its monounsaturated fraction consists mainly of erucic acid at 40 to 50 per cent of the oil, with oleic acid at only 5 to 12 per cent.

That single fact reorders the question. Total MUFA is the weaker comparison, because in mustard oil it bundles oleic acid together with erucic acid, and those two are not doing the same job.

What the published per-100 g MUFA figures show

Among oils that publish per-100g values, the highest MUFA figures sit around 72 grams. In the SatRas range the yellow mustard oil is the highest at 72.6 grams of MUFA and 4.9 grams of saturated fat per 100 grams, against 60.2 grams for the high oleic oil and 60.1 grams for the black.

That ordering surprises people who assume the oil with "high oleic" in its name must lead on MUFA. It does not, because oleic acid is only one of the monounsaturated fatty acids present, and it is not the largest one in ordinary mustard oil.

Why is total MUFA a misleading number for mustard oil?

Because in mustard oil most of the MUFA is erucic acid, not oleic acid. Research on Brassicaceae mustards reports the monounsaturated fraction as mainly erucic acid at 40 to 50 per cent and oleic acid at 5 to 12 per cent, so a high total can be driven by the component buyers are usually trying to reduce.

Comparing mustard oil to olive oil on total MUFA makes this obvious. Both score highly, but olive oil's monounsaturated fat is overwhelmingly oleic acid, while ordinary mustard oil's is dominated by erucic acid. The same number describes two different things.

This is why a brand quoting only a MUFA figure is telling you very little, and why the split matters more than the total.

What should you compare instead?

Compare oleic acid in grams per 100 grams, and treat erucic acid as a separate line rather than folding it into a single MUFA total. Those two numbers together describe the oil. A total on its own does not.

The difficulty is that very few Indian mustard oils publish either figure. Most declare saturated, monounsaturated and polyunsaturated totals because packaged food labelling requires them, and stop there. Oleic and erucic values come from a fatty acid profile test, which is an extra cost and an extra disclosure.

What do the published SatRas values show?

The high oleic oil publishes 25.75 grams of oleic acid per 100 grams on the laboratory report shown on its product page. Set against the 5 to 12 per cent range reported for ordinary mustard oil, that is a substantial difference in composition, and it comes from the seed rather than from processing.

The same report publishes 23.85 grams of erucic acid per 100 grams. That is roughly half the 40 to 50 per cent typical of regular mustard oil, and it is well above the under 2 per cent erucic threshold that defines oils such as canola. Both things are true at once, and a brand that publishes the figure lets you weigh them yourself.

Which oil should you choose for which reason?

If the goal is the highest monounsaturated total with the lowest saturated fat, the yellow oil leads on both counts. If the goal is the highest oleic share, the high oleic oil is the one with a published figure. If the goal is flavour for tadka and pickling, neither number is the deciding factor.

Two entries in that table say "not published", and that is deliberate. The black and yellow oils declare their SFA, MUFA and PUFA totals but not their oleic or erucic values, so those cells stay empty rather than borrowing the high oleic oil's numbers. Any brand that quotes one product's laboratory figures against another product's name is telling you something untrue.

The black mustard oil is chosen for pungency, which comes from allyl isothiocyanate rather than from any fatty acid, and the yellow mustard oil for mildness and its fat profile.

How do you check a MUFA claim before believing it?

Four checks separate a measured claim from a marketing one.

  1. Ask for grams per 100 grams, not percentages of an unstated total or a multiplier like "twice as much".
  2. Ask whether oleic and erucic are stated separately. A MUFA total alone cannot be interrogated.
  3. Ask which product the report covers. A fatty acid profile applies to the oil that was tested, not to a brand.
  4. Ask when it was tested. Composition follows the seed and the season, so a dated report is worth more than an undated claim.

What the evidence does not settle

A favourable fatty acid profile is not a health outcome, and nothing here should be read as one. Research on dietary fats generally supports replacing saturated fat with unsaturated fat, but the size of any benefit depends on the whole diet rather than on one ingredient.

Erucic acid is the genuinely contested part. Regulators in several countries have limited erucic acid in food oils, and ordinary mustard oil sits well above the thresholds used for canola. A halved figure is a smaller exposure, not an eliminated one, and this article does not claim otherwise.

The ICMR-National Institute of Nutrition's dietary guidelines recommend limiting visible fat, meaning cooking oil, to 20 to 50 grams per person per day.
