A1-grade mustard seeds, screened for moisture, residues, and quality.

F.A.Q.

Three one litre tins, one each of wood pressed black, yellow and high oleic mustard oil. The set is Rs 950. Bought separately the same three tins are Rs 304, Rs 449 and Rs 359, so the combo covers the full SatRas oil range in one order.

By seed and by measured panel. Black is pungent, at 60.1 g monounsaturated and 8.2 g saturated fat per 100 g. Yellow is mildest, at 72.6 g and 4.9 g. High oleic comes from Raya Hisar 1706 seed and carries 25.8 g oleic acid within 60.2 g monounsaturated fat.

Black for tadka, pickles, marinades and anything deep fried, where pungency carries the dish. Yellow for everyday sabzi, dal and fusion cooking where a sharp note would take over. High oleic for daily high-heat cooking, since raised oleic content improves resistance to oxidation while frying.

It puts all three SatRas oils side by side without placing three separate orders. Most households settle on one as their daily oil and keep black for pickling and tadka. Trying them together is the quickest way to work out which one that is for your kitchen.

Best before is 9 months from packaging for each tin, stored dry and away from heat and light. Because three tins are opened over the same period, keep the caps closed and work through one as your main oil rather than dipping into all three at once.
