How to Buy Real Desi Kala Chana in India

Desi chana and kabuli chana are two seed types of one species, and the difference that matters to a buyer is the seed coat. Research from ICAR's Indian Institute of Pulses Research puts husk recovery at 22.8% of the grain in desi varieties against 10.9% in kabuli, so twice as much of what you buy is coat.

That coat is not packaging. India's food composition tables show it carries about 40% of the grain's dietary fibre and 69% of its calcium, so whole desi chana and its split dal are not interchangeable.

What makes a chana desi rather than kabuli?

Desi and kabuli are separated by flower colour, pigmentation, seed size, shape and coat thickness. ICAR-IIPR describes desi types as having pink flowers with anthocyanin pigmentation and small coloured seeds with a thick coat, while kabuli mostly has white flowers, no pigmentation, and large smooth ram's-head seeds with a thin one.

The size gap is substantial. Across 46 varieties released in India in a single trial, desi averaged 18.1 g per 100 seeds against 34.6 g for kabuli, ranging 12.1 to 26.5 g against 23.5 to 61.9 g.

The coats differ structurally too. In kabuli the outermost layer stays a single-layered palisade; in desi it becomes multi-layered, thickening into hardened cells that carry the phenolics behind the colour. Pigment and toughness arrive together.

Why does that thicker coat change the grain?

The thicker coat is why desi behaves differently in a kitchen. The same study measured mean soaking at 233.8 minutes for desi against 125.0 for kabuli, so it takes roughly twice as long to take up water.

The two also mill differently. Dal recovery from desi was 73.7% against 85.6% for kabuli, because so much more of the desi grain leaves as husk.

Within desi varieties, smaller seeds carry proportionally more coat: the study found a significant negative correlation between husk recovery and 100-seed weight, r = -0.611. A smaller desi grain is a higher-husk grain, so a kilogram brings more fibre and coat-bound minerals.

One common belief does not survive the data. Seed size tracks variety rather than growing region, and the authors state milling performance was largely independent of the growing environment. Varieties released in one state included both the largest and among the smallest desi seeds.

How much nutrition sits in the coat?

The ICMR-National Institute of Nutrition lists whole Bengal gram and its dehusked split dal as separate foods, codes B002 and B001. The gap between the two columns is the coat.

Fibre falls 40% and calcium 69% when the coat comes off. Protein moves the other way and rises about 15%, because the coat is bulk with very little protein in it, so removing it concentrates what remains.

One limit is worth stating. IFCT publishes a single entry for Bengal gram and does not separate desi from kabuli, so no figure here can argue desi is more nutritious. What the table supports is the whole-versus-split comparison.

Is most kala chana actually black?

Most of it is not. Desi seed colour runs from light brown to deep black, and among 261 desi accessions examined in a 2025 study in BMC Plant Biology, 200 were brown, 34 yellow, 14 green and only 13 black.

Truly black chana is a tiny fraction of desi germplasm, and the dark brown grain sold as kala chana across India is the normal case. The pigment was confirmed as anthocyanin rather than melanin by a pH-differential assay.

So colour is a poor grading signal. A darker bag is not a better bag, and a uniformly jet-black lot is not a reason for a premium.

Does "unpolished" mean anything in Indian law?

It does not. The notified standard for pulses sets limits for moisture, extraneous matter, defects, discoloured seeds and uric acid, and bars toxic or noxious seeds and added colouring matter. It defines neither polished nor unpolished pulses and sets no labelling rule for either. The word polishing appears only in the rice clauses.

So "unpolished" on a pack of chana is a marketing description with no Indian legal test behind it. One binding rule sits nearby: the Prohibition and Restrictions on Sales Regulations bar selling food articles coated with mineral oil except where permitted. An oil-bright shine is worth questioning.

The limits that are enforceable are these.

What should kala chana cost per kg?

The floor under the price is the support price. The Cabinet fixed the minimum support price for gram for the 2026-27 rabi season at ₹5,875 per quintal, or ₹58.75 per kg at the farm gate.

The only government-set retail figure for whole chana is the Bharat scheme, which in December 2024 priced chana dal at ₹70 per kg and chana whole at ₹58. That ₹12 gap is the milling premium, consistent with the 73.7% dal recovery above.

Both are policy prices rather than open-market rates, so treat them as a floor.

What can you actually judge in the bag?

Size is the most informative thing you can see, and the correlation above puts numbers behind it.

Uniformity cuts both ways. Some variation in shade is normal, since brown, black and intermediate seeds occur within the type. Grain that is perfectly even and glossy is the case to ask about, because the standard bans added colouring matter and mineral oil coating.

Everything else that matters is invisible: moisture, uric acid and extraneous matter are laboratory measurements, not shelf judgements.

What do buyers most often get wrong?

Four mistakes come up repeatedly.

  • Paying a premium for jet-black grain. Only 13 of 261 desi accessions studied were black. Dark brown is the normal case, and uniformity is a reason to ask about dye rather than to pay more.
  • Assuming the growing region sets the size. It does not. Seed size tracks variety, and one state's releases spanned both the largest and smallest desi seeds in the trial.
  • Expecting to check kala chana quality by eye. Moisture, uric acid and extraneous matter are laboratory limits; size and shade are the only honest visual signals.
  • Soaking for as long as kabuli. Desi needs roughly twice as long, around 234 minutes against 125.

What these figures do not settle

The milling and seed-size figures come from one trial at a single site in one season. They separate desi from kabuli clearly, but are not a national average.

Two other limits are worth naming. This article carries no open-market retail price range, since MSP and Bharat figures are policy prices. And the nutrition table compares whole grain against split dal, not desi against kabuli.

National dietary guidance suggests soaking overnight, then keeping the grain in a moist cloth, warm and out of direct light until it germinates.

Is black chana better than white chickpeas?

Neither is better outright, and they suit different dishes. The desi type carries proportionally more seed coat, so a kilogram brings more fibre and more coat-bound minerals, and it holds its shape through long cooking. Kabuli is larger, milder and softens faster, which is why it suits chhole and hummus. Many kitchens keep both.

How should kala chana be stored at home?

Store it airtight, cool and dry, because moisture is the parameter the food standards themselves control for. The legal ceiling is 14% moisture for whole pulses and 12% for dehusked ones. Whole grain with its coat intact generally keeps better than split dal, which exposes far more surface area to air, moisture and pests.
