Buy whole moong if you want the fibre or you plan to sprout, and buy split moong dal if you want it to cook quickly and sit lightly. India's own food composition tables put whole green moong at 17.04 g of dietary fibre per 100 g against 9.37 g for the split dehusked dal, a gap of 45%.
The split kind is not simply a worn-down version of the whole one. Hulling removes a seed coat that carries very little protein, which leaves what remains more protein-dense per 100 g, and it also removes about a third of the sugars associated with wind. Each option gives something of value, and the trade is fibre and minerals against speed and digestibility.
What does dehusking actually remove from a moong seed?
Dehusking removes the green seed coat, and Indian food law treats that coat as a real difference, not a cosmetic one. The national standard for pulses sets maximum moisture at 14% for whole pulses but 12% for dehusked ones, because a dehusked grain holds water differently.
The coat is also where much of the seed's protective chemistry sits. Research on mung bean seed coat published in Molecules in 2022 reports that phenolics and flavonoids are concentrated there, at roughly 84% of the seed's total.
Two cotyledons and the embryo sit under the coat. Milling separates all three, which is why splitting ends the seed's life as a seed.
How do whole and split moong compare per 100 g?
Both columns come from the ICMR-National Institute of Nutrition's Indian Food Composition Tables 2017. Whole green gram is food code B011, the split dal B010.

The main point is fibre. Whole moong carries roughly 1.8 times the dietary fibre of the dal, and that one figure accounts for most of the differences below.
Protein runs the other way, and the direction surprises people. The husk has almost no protein, so removing it concentrates what is left. Polyphenols fall furthest, by about 93%, which is what the seed-coat chemistry above predicts.
Why does split moong sit lighter?
Split moong sits lighter because dehusking removes much of what ferments in the gut. IFCT puts total oligosaccharides at 2.01 g per 100 g in whole moong against 1.31 g in the dal, a fall of about 35%. Phytate, which binds iron, zinc and calcium, drops from 375 mg to 170 mg.
Cooking closes more of the gap than the form does. The ICMR-NIN Dietary Guidelines for Indians states that boiling or pressure cooking destroys the enzyme inhibitors that block digestion, and that phytic acid falls with either method, making iron, calcium, magnesium and zinc more absorbable.
The same guidance adds a caution: do not overcook, because prolonged boiling costs lysine and lowers protein quality.
Which one sprouts, and why?
Only whole moong sprouts. Germination needs the embryo, and since it sits between the two cotyledons and splitting separates them, a split seed has nothing left to germinate. Dehusked-but-unsplit moong is a different case, but the dhuli dal sold in most Indian kitchens is both.
ICMR-NIN sets out the home method plainly. Soak the grain fully submerged overnight or for at least 12 hours, then transfer it to a moist muslin cloth in a covered jar. Kept warm and out of direct light, it should sprout in one to three days.
It also gives a stopping point most kitchen advice omits. The sprout should grow no longer than the grain itself, because past that it starts consuming the nutrients it was grown for.
Germination changes the chemistry measurably. A 2025 study in Food Science and Nutrition found phytic acid in mung beans fell 39.74% and tannins 70.51% after 48 hours, while protein digestibility rose 4.40%. Saponins moved the other way, so sprouting is not a uniform reduction in everything.
What should a pack of moong legally guarantee?
India's pulses standard covers whole, dehusked and split pulses alike, and names green gram directly. The FSSAI standard for cereals and pulses requires that pulses be free from toxic or noxious seeds and from added colouring matter, and it sets the ceilings a buyer can hold a seller to.

Two are useful in a shop. The ban on added colouring matter is the rule behind any suspiciously uniform, bright green moong, and uric acid is the regulatory marker for insect infestation.
What should whole moong cost against dal?
Whole moong should cost less per kilogram than dal, because a fifth of the grain is lost in milling. A December 2024 release from the Department of Consumer Affairs fixed Bharat Moong Dal (Dhuli) at ₹107 per kg and that of Bharat Moong Dal (Sabut) at ₹93 per kg. Whole moong costs about 13% less.
Those are subsidised scheme prices from 2024 rather than open-market rates today, so treat the ratio as the durable part and the rupee figures as a floor.

What do buyers most often get wrong?
Four mistakes account for most of it.
- Comparing moong dal price per kg against whole moong directly. A fifth of the grain is lost in milling, so the dal should cost more per kilogram. A dal that undercuts whole grain is worth a question.
- Buying split moong to sprout. Splitting destroys the embryo, so dhuli dal cannot germinate no matter how long it is soaked.
- Draining the cooking water. National dietary guidance is explicit that folate is retained by boiling with just enough water and not pouring it away.
- Reading bright uniform green as freshness. Added colouring matter is banned, so unnatural evenness is a reason to ask, not to pay more.
What these numbers do not settle
The composition tables describe grain as it is sold, not as it reaches you after soaking and cooking, and both steps move the figures. Content also varies by season, region and storage, which is why IFCT publishes a standard deviation beside every mean rather than a single clean number.
One caution is worth stating plainly. IFCT reports phosphorus and potassium as higher in the dal than in whole moong, which contradicts every other mineral in the table, and the source does not resolve it. We will not build an argument on either figure.
Raw sprouts carry a genuine disagreement in the literature. ICMR-NIN says sprouts may be eaten without further processing. Food safety research in Emerging Infectious Diseases reports that the warm humid conditions germinating a seed also multiply any pathogen on it, and advises higher-risk groups to avoid raw sprouts. That paper is from 1999 and describes mechanism rather than current guidance, but the mechanism has not changed. Cooking sprouts resolves it.
