Which Tests Should an Indian Mustard Oil Lab Report Include?

A mustard oil lab report should answer three separate questions: whether anything has been added to the oil, whether it is the oil the label claims, and whether it carries contamination. Most reports shown by brands answer only the second, because a fatty acid profile is the cheapest test and the most flattering to publish.

That gap is worth understanding before you accept any report as proof. A fatty acid profile is the test most often published and the one least able to prove purity, because an adulterant can sit inside a profile that looks entirely normal.

What are the three things a lab report can tell you?

Adulteration, identity and contamination. They are distinct questions, they need different tests, and a report covering one says nothing about the other two.

Adulteration asks whether a cheaper oil has been blended in. Identity asks whether the oil matches what the label claims, whether that is a cold pressed label or a fatty acid claim. Contamination asks whether unwanted substances came along with the seed or the process.

A brand publishing a single test and calling it "lab tested" is answering one question out of three.

Which adulteration tests matter for mustard oil?

The argemone test matters most, because it is the adulterant with a public health history rather than merely a commercial one. Argemone oil comes from a weed whose seeds resemble mustard seeds, and research on edible oil adulteration links it to epidemic dropsy outbreaks in India.

Published detection methods rely on acid colour reactions. A sulfuric acid test reads the alkaloid sanguinarine, which is what produces the colour change. A nitric acid test mixes 5 ml of oil with 5 ml of concentrated nitric acid, and a ferric chloride test uses concentrated hydrochloric acid.

What proves the oil is what the label says?

For mustard oil sold as kachi ghani or cold pressed, the deciding figure is allyl isothiocyanate. Indian food standards permit either label only where the oil's natural allyl isothiocyanate content is not less than 0.20 per cent by weight, which makes it a compositional test rather than a marketing description.

That threshold is the single most useful identity number on a mustard oil report, and it is the one most often absent. A pack can say kachi ghani without a brand ever publishing the figure that legally supports it.

The fatty acid profile answers a different identity question: what kind of mustard oil this is. It reports saturated, monounsaturated and polyunsaturated fractions, and on a fuller panel the individual acids including oleic and erucic.

What contamination screening should a report cover?

Four categories cover most of the real risk.

  • Solvent residue, chiefly hexane, which is relevant to any oil that may have been solvent extracted rather than pressed.
  • Heavy metals, which reach the seed through soil and water.
  • Aflatoxins, produced by moulds during storage rather than by processing.
  • Pesticide residues, which follow cultivation practice rather than the press.

None of these are visible, none affect taste at the levels that matter, and none can be inferred from a fatty acid profile. They are the part of the report that a buyer cannot approximate by any other means.

Which numbers describe the oil's condition?

Three classical measures, all of which appear on a proper certificate of analysis and none of which most brands publish.

Peroxide value Oxidation, which rises as an oil ages or is heated
Free fatty acid Breakdown of the oil, an indicator of quality and storage

Peroxide value and free fatty acid are the two that change over time, which is why a report is only as good as its date. A certificate from eighteen months ago describes an oil that no longer exists in that condition.

What makes a report credible rather than decorative?

Five features, and all five are checkable from the document itself.

  1. A named laboratory, not "third-party tested" as an unattributed phrase.
  2. A report or reference number, so the document can be traced.
  3. A date, because oxidation measures move.
  4. A named sample, identifying which product and ideally which batch was tested.
  5. Stated methods, so the reader knows what was actually run.

A report missing the laboratory name and the reference number is a picture of a document rather than evidence. This matters more than it sounds, because a scanned image with no searchable text cannot be checked by anyone, including the search engines a buyer might ask.

What a lab report still cannot tell you

It describes the sample that was tested, not the bottle in your kitchen. Unless the report is tied to a batch code you can match to your pack, it is evidence about the producer's process rather than about your purchase.

It also cannot settle nutrition questions. A favourable fatty acid profile describes composition, not a health outcome, and nothing on a certificate of analysis speaks to what an oil will do for anyone. This guide is educational and is not medical advice.

The reasonable standard is not perfection. It is that a brand states which tests were run, on what, by whom and when, and does not present one answered question as though it were three.
