Argemone oil is pressed from the seeds of Argemone mexicana, the Mexican poppy, a weed that grows in and around mustard fields and produces seeds that closely resemble mustard seeds. It contains the alkaloid sanguinarine, and consuming oil contaminated with it has been linked to outbreaks of epidemic dropsy in India, including a severe one in Delhi in 1998.
That history is why argemone occupies a specific place in Indian food regulation and why it is the first thing a mustard oil test looks for. It reaches the press two ways, one accidental and one deliberate, and the methods that find it need concentrated acids rather than anything in a kitchen.
What is argemone oil?
Argemone oil is the oil of Argemone mexicana, a spiny weed found across India and commonly called Mexican poppy or satyanashi. Its seeds are similar in size and appearance to mustard seeds, which is precisely why it became the classic mustard oil adulterant rather than an adulterant of some other oil.
The problem is chemical rather than botanical. Research on edible oil adulteration identifies the toxic constituents as the alkaloids sanguinarine and dihydrosanguinarine, and it is these compounds, not the oil itself, that cause harm.
What is epidemic dropsy?
Epidemic dropsy is a poisoning syndrome caused by consuming argemone-contaminated edible oil. Published research links it directly to the alkaloids in Argemone mexicana seed oil, and records outbreaks across India, with one of the most severe occurring in New Delhi in 1998 following consumption of tainted edible oil.
The word dropsy refers to fluid retention and swelling, historically the most visible sign. Because contamination affects whatever quantity of oil was blended, outbreaks tend to be clustered rather than isolated, which is what gives them their epidemic character.
This is the reason argemone is treated as a safety matter rather than a quality matter. Most adulteration reduces what you paid for. This kind can make people ill.
How does argemone oil get into mustard oil?
Two routes, one accidental and one deliberate. Accidentally, argemone grows as a weed among mustard, and because the seeds resemble each other closely, poor cleaning at the harvest or milling stage lets them through into the press.
Deliberately, argemone oil is cheap, and it can be blended into mustard oil to increase volume. Research on edible oil adulteration lists it alongside mineral oil, castor oil, karanja oil, cottonseed oil, paraffin and linseed oil among the substances added to edible oils to extend them.

How do laboratories detect argemone oil?
Chiefly by acid colour tests, in which sanguinarine produces a visible reaction. The published methods are specific and use laboratory reagents rather than kitchen materials.

Read the middle column carefully. Every one of these requires a concentrated mineral acid, which is a laboratory reagent that should be handled with proper equipment, not something to attempt at a kitchen counter.
Why do the home tests circulating online not work?
Because most of them test the wrong property. The best known is the freezer or refrigeration test, in which oil is chilled and judged by how it solidifies. Different genuine mustard oils behave differently when chilled depending on variety and season, so the result does not separate pure oil from adulterated oil reliably.
Colour, smell, thickness and taste have the same problem. Each varies legitimately between a black mustard oil and a yellow one, between one season's crop and another, and between pressing methods. A property that varies for innocent reasons cannot be used as a purity test. There is also a specific trap with argemone: it is not the adulterant that announces itself. The oil is not strongly coloured or strongly flavoured at the proportions involved, which is exactly why it went undetected long enough to cause outbreaks.
What can a buyer actually check?
Five things, none of which involve a test tube.
- Whether the brand publishes a laboratory report at all, and whether that report names the laboratory and carries a date.
- Whether the seed is cleaned before pressing, and by what method.
- Whether the oil is single-source, since blending is where extension happens.
- Whether the batch is identifiable on the pack, so a report can be tied to the bottle in your hand.
- Whether the price is plausible. Oil sold far below what the raw seed costs has to be explained by something.

Is argemone still a live risk?
The honest answer is that it is a controlled risk rather than an eliminated one. Argemone is regulated, monitored and well understood, the detection methods are established, and organised producers clean their seed. Outbreaks are far less common than they once were.
But argemone grows wherever mustard grows, the seeds still resemble each other, and the economic incentive to extend an oil has not disappeared. Adulteration research continues to treat mustard oil as a category worth monitoring, which is a reasonable indication that vigilance is still warranted.
