SatRas Wood Pressed Black Mustard Oil is extracted from quality-verified black mustard seeds using traditional wooden kolhu presses at temperatures below 49°C. This slow, careful extraction preserves the oil's complete natural character especially its Allyl Isothiocyanate (AITC), the biologically active compound that gives black mustard oil both its signature flavour and its functional value.
What does AITC do for your family? Research indicates that AITC may stimulate the secretion of digestive enzymes and bile, supporting more efficient breakdown of food. It also exhibits natural antimicrobial activity against a broad range of bacteria and fungi, which is why this oil has been the foundation of Indian pickling and food preservation for centuries.

Yes, and it is the pungent one in the SatRas range. The sharp note comes from allyl isothiocyanate, the compound behind mustard's bite, which is why it suits tadka, pickles, marination and deep frying. Cooks who find that pungency strong usually prefer the yellow oil instead.

Flavour and fat profile. Black is sharper and built for pungent cooking. Yellow is milder and carries 72.6 g of monounsaturated fat and 4.9 g of saturated fat per 100 g, the gentlest profile in the range. Choose black for punch and yellow for everyday mildness.

Sourced directly from farmers in Rajasthan and Haryana, then Sortex cleaned to A1 grade before pressing. This is the sourced oil in the range. The high oleic oil is the one grown on SatRas farms in Hisar from the Raya Hisar 1706 variety developed at CCSHAU.

Look for three things on the label. A named extraction method rather than just the word pure. A fatty acid breakdown in grams instead of adjectives. And glass or tin packaging rather than plastic. SatRas prints all three, and publishes a laboratory report on the high oleic oil.

Yellow, at 4.9 g saturated fat and 72.6 g monounsaturated fat per 100 g, the gentlest profile in the range. Black measures 8.2 g saturated and 60.1 g monounsaturated. These are measured figures rather than claims, and they are printed on the pack.
