You cannot establish mustard oil purity at home. The established detection methods use concentrated nitric, sulfuric or hydrochloric acid, which are laboratory reagents rather than kitchen materials, and the adulterant of greatest concern does not announce itself through colour, smell or texture.
That is a less satisfying answer than the ones circulating online, and it is the accurate one. The scrutiny worth doing happens before the bottle reaches your kitchen, because once it is open there is little a home test can show that the label and a lab report cannot show better.
What detecting adulteration actually requires
Not in any way that produces a reliable result. Research on edible oil adulteration sets out the detection methods, and they are acid colour reactions: a sulfuric acid test that reads the alkaloid sanguinarine, a nitric acid test mixing 5 ml of oil with 5 ml of concentrated nitric acid, and a ferric chloride test using concentrated hydrochloric acid.
Every one requires a concentrated mineral acid handled with proper equipment. That is the gap between a laboratory test and a kitchen test, and no amount of improvisation closes it.
What do the popular home tests actually show?
Each tests a real property. The problem is that the property varies for innocent reasons, so a result cannot separate a pure oil from an adulterated one.

The refrigeration test is the most widely repeated and the weakest. Chilling behaviour follows fatty acid composition, which legitimately differs between a black mustard oil and a yellow one, between one season's crop and the next, and between pressing methods. A genuine oil can behave in a way the test treats as suspicious.

Why is mustard oil a target for adulteration?
Because the economics invite it. Cold pressed and kachi ghani oils sell at a premium over refined oil, and the premium is large enough that diluting a batch with something cheaper is profitable. Research on cold pressed rapeseed processing notes that a cold press leaves 16 to 20 per cent of the oil behind in the seed cake, while solvent extraction strips the same meal to around 1 per cent or less, so the genuine article costs materially more to produce per litre.
There is also a botanical accident working against mustard specifically. Argemone grows as a weed in and around mustard fields and produces seeds that closely resemble mustard seeds, so poor cleaning lets them into the press without anyone intending it. Most oils face only the deliberate route. Mustard oil faces both.
That combination, a real price premium and a look-alike seed, is why mustard oil carries a longer adulteration literature than most Indian cooking oils, and why the checks below are worth the minute they take.
Is there anything worth doing at home?
Yes, but reframe what you are doing. You are not testing purity. You are establishing a baseline for a supply you already have reason to trust, so that a change becomes noticeable.
- Note the smell of the first bottle from a batch you are satisfied with.
- Note the colour against a white surface in daylight, not under kitchen lighting.
- Note the behaviour in the pan, particularly how quickly it heats and whether it smokes sooner than usual.
- Compare the next bottle against those notes rather than against a rule from the internet.
A sharp, unexplained departure from a baseline you set yourself is worth acting on. An absolute judgement made from a single bottle and a freezer is not.
Where does the useful checking actually happen?
Before purchase, on information rather than on the oil. Five checks carry more weight than anything you can do at the counter.
- Does the brand name its laboratory and publish a report with a reference number and a date, rather than the phrase "third-party tested"?
- Does the pack carry a batch code you could match against a report?
- Is the oil single-source, since blending is where extension happens?
- Does the label claim survive scrutiny, particularly kachi ghani or cold pressed, which in India require natural allyl isothiocyanate of not less than 0.20 per cent by weight?
- Is the price plausible against what the seed itself costs?

What does the packaging tell you?
More than most buyers use. Light and air drive oxidation, so a clear bottle stored under shop lighting is in a worse position than the same oil in tin or dark glass, regardless of what either contains.
Plastic raises a separate question about what migrates into an oil over a long shelf life. What should make you stop and ask questions?
Four signals, none of which requires a test.
- A price well below what the raw seed costs. Something has to explain the gap.
- A kachi ghani or cold pressed label with no supporting figure, when the label carries a legal compositional threshold behind it.
- A pack with no batch identifier, which makes any report untraceable to your bottle.
- A brand that says "lab tested" and cannot say by whom, when, or for what.
Each is a reason to ask rather than a verdict. Together they describe a supply chain that has not made itself checkable.
What this guide cannot do
It cannot tell you whether the bottle in your kitchen is adulterated. Only a test on that batch answers that, and the tests that matter are laboratory work.
